Mascobado Sugar

Muscobado-SugarOrganic muscobado sugar is nutritionally richer than other brown or refined sugars and retains most of the natural vitamins and minerals found naturally in sugarcane juice such as potassium, calcium, magnesium and iron.

Used in baked goods and specialty recipes, muscobado sugar is also popular in confectionaries such as peanut brittle and banana chips.

When cooking with muscovado sugar, it is important to be aware that it more moisture content than other sugars, as it has a habit of behaving strangely in baked goods.

Also known as 'mascovado', 'moist sugar', 'Barbados sugar' or the healthy sugar, muscobado sugar is whole, minimally or unrefined non-centrifugal sugar which is darker in colour and is coarser (very large, rough, uneven grains) and stickier than other brown sugars.

It takes its flavour and colour from the evaporated sugarcane juice unlike other brown sugars which is mostly molasses added to refined white sugar.

By international certified-organic standards, muscobado sugar must have moisture content between 1.5 and 3.5%, be consistent in colour (golden brown to dark brown) with a shelf life of nine to 48 months.
