Heavenly Rice Salad

Thanks to a regular customer who says that there is absolutely no other way to eat brown rice!

Ingredients

  • 1 cup of brown rice, cooked
  • 1 chopped avocado
  • a handful of finely chopped spanish onion
  • tahini
  • lemon or lime juice
  • coconut oil (optional)

Note: All ingredients in bold are available at the Community Foods shop

Directions

  1. Let the rice cool
  2. Mix in rice, avocado and onion
  3. Add tahini and lemon juice as needed to taste
  4. If you find this salad too thick, add some coconut oil
