Black Sapote Cake

This is a tropical specialty, giving a nice alternative to chocolate cake. Perfectly times with ripe sapotes being ready for Christmas.


  • 1 cup of black sapote pulp
  • 2 cups of flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup rapadura (or brown) sugar
  • 1/2 cup butter
  • 3 eggs
  • 3/4 cup shredded coconut
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp ground cloves

Note: All ingredients in bold are usually available at Community Foods


  1. Cream together sugar and butter
  2. Add sapote pulp and eggs and beat well
  3. Sift together the dry ingredients and gently, gradually add to the sapote mix
  4. Pour into a wide shallow cake tin
  5. Bake in a moderate oven for 45 minutes (or until risen)

You could really splash out and top this cake with Chocolate Tofu Ganache
