Apple Crisp with Dried Cranberries



  • 1 cup flour
  • 1 tsp cinnamon
  • 170g unsalted butter, cut into small cubes
  • 1 cup rolled oats
  • 1/4 cup packed rapadura sugar
  • 2 tbs raw sugar
  • 1/2 tsp salt


  • 8 medium granny smith apples, peeled, cored and cut into 2cm wedges
  • 1/4 cup sugar
  • 2 tbs fresh lemon juice
  • 1 cup dried cranberries
  • 1/2 cup unsweetened apple juice
  • 55g unsalted butter, melted


  1. Preheat the oven to 180 degrees
  2. In a medium bowl, whisk the flour and the cinnamon together
  3. Cut in the butter with a pastry blender or your fingers until the mixture represents a coarse meal
  4. Stir in the oats, rapadura, raw sugar and salt
  5. In a large bowl toss the apples with the sugar and lemon juice
  6. Add the cranberries, apple juice and melted butter and toss again
  7. Spread the filling in a 23cm x 33cm baking dish
  8. Sprinkle the topping evenly over the apples
  9. Bake for 55mins, until the topping is golden and the filling is bubbling
  10. Let the crisp cool slightly and serve with whipped cream
