Recipe: Ola's Fried Green Tomatoes

In spring, tomatoes are ripening and it's a perfect time to use them in the kitchen. We all know a few dishes or sauces made from ripe red tomatoes, but what about green ones? Do you know the famous book by Fannie Flagg with the same yummy title? Inspired by all of the above here is my variation on the recipe from the book.

You can use unripe tomatoes however there is a variety which actually are green and they are perfect for this dish. They are called BLACK RUSSIAN and have absolutely nothing to do with Russia ;) I get mine organic from RealFood Network at Rusty's markets. All other organic ingredients you can get from Community Foods.

Serves 2. Preparation time 30 minutes.

Ingredients:

  • about 6-7 small tomatoes, as green as you can get
  • oat flour (grind oats in a food processor or use the mill in our shop) or spelt flour
  • 1 egg
  • sesame seeds (lightly toasted if you want to save time)
  • himalayan salt and black pepper
  • coconut oil for frying

Method:
Cut small slice from top and bottom of tomato then cut in 0.5 cm slices. Sprinkle with salt and pepper and put aside for 15 min so they release their juices.Prepare 3 small bowls, one with oat flour, one with egg lightly whisked, one with sesame. Heat oil in a frying pan and put each slice into flour then egg and lastly to sesame with oat bran. Fry on medium heat for around 4-5 min till crunchy and golden brown.
