Apple and Date Cake

This cake is easy to make, uses simple ingredients and tastes truly divine.


For the cake mix:

  • 2 large apples, finely chopped (about 400g)
  • 1 cup of chopped, pitted dates (about 200g)
  • 1 teaspoon of bicarbonate soda
  • 1 cup of boiling water
  • 125g butter (or substitute)
  • 1 teaspoon of vanilla essence
  • 1 cup sugar
  • 1 egg
  • 1 and a half cups of plain flour

For the topping:

  • 60g of butter (or substitute)
  • half a cup brown sugar (firmly packed)
  • half a cup of soy milk (or substitute)
  • 2/3 of a cup of shredded coconut

  1. Grease a deep, 19cm square cake tin and line with paper. Grease the paper.
  2. Combine the apples, dates, bi-carb soda and water in a bowl. Cover and stand until warm.
  3. Beat the butter, vanilla essence and sugar in a small bowl until light and creamy. Add egg and beat until combined.
  4. Transfer the mixture to a large bowl. Stir in the sifted flour alternately with apple mixture. Pour into the prepared pan. Bake in a moderate oven for 50 minutes.
  5. While baking, prepare the topping as follows. Combine the butter, sugar, soy milk and coconut in pan. Stir over low heat until the butter is melted and sugar dissolved. Spread cake with topping.
  6. Bake about another 30 minutes or until golden brown. Cool in pan.

This cake is suitable for freezing.
